Route something with usb3 and or impedance control. Once you've done that, make it a rigid-flex board to learn about going about that and outputting draftmen drawings for layer stacks and design spec for manufacturer. Then do into re making existing schematics of existing boards, maybe including new power circuitry and giving whatever you're making a bit more functionality and/or combining MCU and breakout boards, and rerouting the board in a new style with an outlandish footprint and mounting setup. The "Tutorials for beginners" are a great way to help you write up a "cheat sheet" for all the standard operations and dealing with the libraries, layers and making footprints etc. Take a course a bit after you've got the basics down.
